7th Seychelles National Culinary Contest - Yane Ladouceur wins dessert category with ‘Ristretto en Declinaison’ |07 April 2017

 

Yane Ladouceur from Constance Ephelia won first place in the dessert segment of the 7th Seychelles National Culinary Contest organised by the Seychelles Tourism Academy (STA) and ISPC Seychelles Ltd.

Since the start of the competition in 2009, Mr Ladouceur has always taken part, and this year marks his second win since 2011.

“It is the second time I win the dessert category of the contest. For our main ingredient we had to use coffee, it was not easy to mix up the ingredients, but I was able to overcome all the obstacles and did a perfect dessert for the jury. I always participate because I want to learn more, to be able to serve my clients an excellent dish,” he said.

Marcus Freminot (lecturer from STA) won second prize, and Lionel Vel (Junior Pastry Chef at Oasis Hotel) came out third.

The culinary competition was judged by a panel of five judges headed by Chef Lionel Rigolet.

“Such competition enables all the participants to show their artistic talents, and express themselves by creating amazing and flavoursome dishes.  All the participants since day one were able to create a high level cooking.  So every year we see that the competition is improving and becoming more famous,” said Chef Rigolet.

The director of the STA, Flavien Joubert, stated that the competition enables the students from the school to gain knowledge from experienced chefs.

“From day one of the competition, the STA students has helped the experienced chefs to prepare their dishes, and such preparations will enable them to gather knowledge and inspire them in the future to take part in such competitions.  Every year, we see new faces willing to compete in the competition, and that is a good experience,” he said.

The winner of each contest walks away with an airline ticket to any regional destination, €800 as a pocket money and accommodation at Constance Ephelia.
